Rock candy is made through the crystallization of a supersaturated solution of sugar and water onto a surface suitable for crystal nucleation. Whew! Yeah, the process sounds complicated, but it’s actually very, very easy to make rock candy. Watch the activity video if you don’t believe us!
*What supersaturation means is that a solution contains more of the dissolved material than could be dissolved by the solvent. In this activity’s case, the solutions in the jars are supersaturated because there’s too much sugar in them and the water they contain can’t dissolve all of it.
